Irish Mudslide Sauce

Last year, I used Irish cream liqueur to make a delicious trifle for St. Patrick's Day.  So, for the past few days, I've been staring at my bottle of Irish cream and wanting to create another recipe with it.  I kept thinking, what would I like to pour this into, other than just a big glass.  So, the desire to just drink it made me think about pouring it over something and that's when I realized that it really, really needed to be a sauce.

I've made rum caramel sauces before so I knew that adding alcohol works well.  But, rather than just adding the Irish Cream, I decided to turn it into a mudslide.  The classic cocktail of Irish cream, coffee liqueur and cream worked perfectly as a sauce.  I may have "sampled" it a bit more often than was needed to make sure it was right before I poured it over ice cream and created dessert heaven.  Enjoy!

Ingredients
1/2 Cup sugar
3/4 Cup heavy cream
Pinch of sea salt
1 oz. Irish cream liqueur
1 oz. Coffee liqueur

Irish Mudslide Sauce
Melt the sugar in a pot over a low to medium flame.  Do not walk away.  When the sugar has completely dissolved, remove it from the heat and add the heavy cream.  The mixture will bubble up.  Return to a low heat and stir vigorously until all lumps are gone and the sauce is a light golden brown.  Remove from the heat and immediately stir in the coffee liqueur and Irish cream liqueur.

  2. I was gonna say I'd just like to eat it from the jar, but I am such an ice cream addict that I'll take a jar plus a pint of good vanilla!
