Winter Crunch Salad
The other day I was reading a story and the main character was digging into a big salad for dinner. It might be sort of an odd thing to crave but that's what I instantly wanted. Not some simple side salad but a hearty, crunchy, filling recipe with lots of different textures.

Vegetable Loaded Couscous Salad

As much as I love salads, especially in this very hot summer, I still need something more substantial and more interesting on my plate. Adding a variety of vegetables, some raw, some cooked helps to create great flavors and textures. And adding couscous makes it much more of a meal.
Recently I had the pleasure of attending the Rediscovering America culinary event at the famous James Beard House in New York and met several award winning chefs who are creating new menu dishes using the fresh produce found at Walmart. Their inspiration is Walmart's commitment to offering fresh, locally grown organic produce to their customers. This support of local farmers not only boosts that state's economy but allows customers to have the freshest, highest quality food.
I also had the chance to sample the bounty of beautiful produce now available at Walmart and came home with a huge and wonderful variety. And why choose which veggie to include in my salad when I can use them all!
I gave my onions, bell peppers and carrots a light saute but still kept some of the crunch. Then I combined them with fresh tomatoes and crisp, peppery arugula. They all got mixed in with the soft, fluffy couscous and drizzled with a tahini vinaigrette. With so many wonderful textures and flavors, I've been eating this for lunch and again for dinner with some grilled chicken. It's my favorite new way to eat all my veggies. Enjoy!
Ingredients
1 Cup pearled couscous
1 1/3 Cups water
1/2 Teaspoon salt, or to taste
1/4 Cup chopped fresh parsley
1 Tablespoon olive oil
1 Red onion, peeled and diced
1 Red bell pepper, diced
1 Green bell pepper, diced
1 Orange bell pepper, diced
2 Carrots, peeled and diced
1 Cup cherry tomatoes, halved
2 Cups arugula
Dressing
3 Tablespoons olive oil
2 Tablespoons water
1 Tablespoon tahini
1 Tablespoon lemon juice
1 Teaspoon mustard
1 Clove garlic, crushed
Salt and pepper, to taste
Add the couscous, water and salt to a pot, bring to a boil, cover, reduce the heat to low and cook for 10 minutes. Turn off the heat but allow the couscous to sit, covered, for an additional 5 minutes. Uncover, add the parsley and fluff with a fork.
Add the olive oil, diced onion, diced bell peppers and diced carrots to a large skillet or cast iron pan. Cook on medium heat for about 10 minutes or until the vegetables begin to soften slightly. They do not need to be cooked all the way through.
Add the cooked vegetables to the couscous and toss with the arugula and cherry tomatoes.
Make the dressing by whisking together the olive oil, water, tahini, lemon juice, mustard and garlic until smooth. Season with salt and pepper and drizzle over the coucous salad. Serve slightly warm or at room temperature.

Crispy Goat Cheese Crouton Balls
Usually, when I eat something really great at a restaurant or on vacation, I come home and am immediately inspired to recreate it. But every once in a while, a tasty treat falls through the cracks and gets shelved for a while. In this case, it got shelved for about 10 years.

Middle Eastern Wedge Salad with Crispy Cauliflower Rice
I, personally, celebrated when the old time wedge salad became popular again. They're the steakhouse classic of iceberg lettuce, tomatoes, bacon and blue cheese dressing. What's not to love? And I'm all for them never going out of style again. But there's also no reason we can't make variations of it.

Let's talk about lunch prep. I feel like the Sunday meal prepping people do tends to be more for weeknight dinners but lunch has always been a big prep situation for me. I love those Whole Foods type salad bars but it's expensive and not always convenient. So I make my own salad bar at home.

Ghee Roasted White and Sweet Potato Salad
For some reason, 2018 is running by super fast for me. Half the things I was supposed to get to in the first quarter of the year are still untouched. And then suddenly I look up and it's two weeks to the start of long summer weekends, beach openings and grilling season. Not that those things are anything to complain about.

Roasted Pear and Arugula Salad with Toasted Walnuts
I was in the park the other day, chatting with a few of my neighbors while our dogs played, and we all said how we felt this was a long summer. Maybe due to life events, maybe because it was such a hot one but either way, we were trying to decide if we were happy to see it end. We're not looking forward to snow and early sunsets but we're still a few months away from that. For now, we're kind of looking forward to the slight cool down of September and the energy the city gets after Labor Day.

Watercress Salad with Honey Sauteed Apples and Almonds
Can we talk about my favorite new healthy green that's not kale? When I say new I mean new to me, of course. Watercress has been around a long time and I had heard of it but I'm ashamed to say I hadn't tried it. Somehow I had this idea that it was super bitter or something so I kept buying spinach and kale and passed it by. Not anymore!

Southwestern Black Bean Salad with Sweet Potato Wedges
Happy New Year, friends! I have to say that I love when New Year's Day falls on a Sunday. I mean, I'm all for resolutions and new beginnings and all that. But to go from chugging a bottle of champagne (I admit nothing) to presenting yourself at the gym the next morning on a bowl of high fiber, whole grain cereal, is a little daunting. By which I mean, it ain't happening. So this way, we kind of get a bridge day to get it together.

Market Salad with Eggs, Asparagus, Corn and Mizuna
On Saturday mornings, especially in spring and summer, you can usually find me at my local farmer's market. I'm fortunate to have a sweet little one just a couple of blocks away. It's not the size and scope of the giant Union Square market but a good supply of vendors set up their tents here on Saturdays and it often serves as my cooking inspiration for the weekend.

Toasted Flax, Asparagus and Carrot Ribbon Salad
I know spring is right around the corner because the market is full of lovely asparagus. And now my refrigerator is as well. There's no way I can pass up these green beauties. Of course they're great on the grill and that's a summer pleasure for sure. But I actually like them crisp and raw.

Warm Roasted Root Vegetable and Farro Salad
I know I've been going on about healthy new year cooking lately but the fact is that grains are a large part of my diet all year long. I have an entire shelf filled with canisters containing a wide variety of them and I love experimenting with new ways to use them. Farro is a favorite and, therefore, in frequent rotation.

Roasted Potato and Bacon Caesar Salad
I love Caesar salad and you probably do, too. I've rarely met anyone who doesn't. But let's be honest and say that there's not much to it. Yes it has delicious garlicky toasted croutons but mostly it's a delivery vehicle for Caesar dressing. That's what we really love, isn't it?

Watermelon and Herbed Feta Cheese Salad
Sweet, juicy, ripe, beautiful watermelon...I've been waiting for you. And just in time for Memorial Day weekend. That is the official start of summer entertaining as far as I'm concerned and whomever decided summer doesn't really start until June 21st needs to rethink that.
