Apple Walnut Salad

Apple Walnut Salad

This is one of our favorite, go-to, salads since it uses ingredients we almost always have around. The sharp taste of the red onion and tang of the cheese goes perfectly with the sweet apples and is a great start to almost any meal.

Ingredients
1 Sweet apple, peeled and sliced
2 Cups mixed salad greens
1/2 Red onion, thinly sliced
1/4 Cup low-fat feta cheese
1/4 Cup walnuts

Dressing
1 Tablespoon olive oil
1 Tablespoon sherry vinegar
1 Tablespoon low-fat mayonnaise
1/2 Teaspoon mustard
1 Clove garlic, minced
Salt & pepper to taste

Whisk together the dressing ingredients and pour over the salad greens, onion and apple slices. Top with the cheese and walnuts. Makes approximately 2 servings.
