Chocolate Chip Banana Bread

Do you have a "buy nothing" group in your neighborhood? They've become super popular around here and I love my local one. Lots of generous folks and community spirit. So much so that a lovely woman was giving away slices of her homemade banana bread. I didn't have time to grab one but it did start a wicked craving.

I've baked banana bread plenty of times but, weirdly, never with chocolate chips. Clearly that oversight needed to be remedied because chocolate chips make everything better, right? I normally like semi-sweet chocolate when baking but I did a couple of tests and preferred the milk chocolate chips in the banana bread.

Since I eat a lot of bananas, I always have them at home, in various stages of ripeness. Over-ripe bananas for banana bread? Yup, chances are I've got at least a couple. You can use ones that are not so far gone if that's all you have, though. But they do need to be fully ripe and have a good strong banana aroma.

I used the Ghrardelli milk chocolate chips because they're big and make little pools of melty chocolate goodness all over the banana bread. Doesn't that sound good? It would have been nice of me to give slices away to my neighborhood group but...um...I kept this one for myself. Enjoy!

Chocolate Chip Banana Bread

Ingredients

  • 1 Stick (8 tablespoons) unsalted butter, at room temperature
  • 1 Cup granulated sugar
  • 2 Eggs
  • 1 Cup plain Greek yogurt
  • 1 Teaspoon vanilla
  • 2 Over-ripe bananas, mashed
  • 2 Cups all-purpose flour
  • 1 Teaspoon salt
  • 2 Teaspoons baking powder
  • 1 1/2 Cups chocolate chips

Instructions

  1. Pre-heat the oven to 350 degrees and line a standard loaf pan with parchment paper for easy removal.
  2. Cream together the unsalted butter and granulated sugar, using a hand or stand mixer. Beat in the eggs, one at a time followed by the Greek yogurt, vanilla and mashed bananas.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder and salt. Mix the dry ingredients into the wet.
  4. Add a teaspoon of flour to the chocolate chips as this will help to keep them from sinking to the bottom of the banana bread. Then fold into the batter.
  5. Pour into the prepared loaf pan and bake for 55 to 60 minutes or until a toothpick comes out clean.
