Frozen Mint Lychee Daiquiri

I get very happy when each seasonal fruit I love finally appears in the market. The first cherries, mangoes, figs, etc. are all cause for celebration and recipe planning. And lychees definitely belong in that category. I can never resist those little rough looking pinkish orbs.

Last week I was shopping at one of my favorite gourmet stores and overheard a conversation between two employees. One was saying that a customer had just asked her for lychee nuts and she had no idea what they were. Another employee pointed them out but the first employee was not impressed by the rough looking skin and didn't think they looked edible. I just had to intervene! I had to tell her that underneath that odd peel was a super sweet, super juicy ball of tropical deliciousness.

When they're in season, I pretty much have a bowl of them around most times. They're perfect when you need a sweet snack but, honestly, they're one of my favorite cocktail ingredients. Just peel them, pull out the center pit and toss them into the blender with your favorite spirit. They go with everything. Cheers!

Recipe for a rum based cocktail flavored with fresh lychees, mint and elderflower.

Ingredients:

  • 4 oz. Rum
  • 8 Lychees
  • 2 oz. Lime juice
  • 2 oz. Elderflower liqueur
  • Small handful fresh mint
  • Ice

Instructions:

  1. Peel the lychees and pull out the pit.
  2. Add them to a blender along with the rum, lime juice, elderflower liqueur and mint.
  3. Add ice and blend until all the ingredients are incorporated and the mixture is slushy.
  4. Pour into a chilled cocktail glass and garnish with a sprig of mint, if desired.
