Frozen Peach Daiquiri

Frozen Peach Daiquiri

This drink is where our cocktail story all began. Last Memorial Day weekend, we were at Costco shopping for the steaks and sides we'd need for holiday grilling with our guests. Anyone familiar with Costco knows you can practically eat an entire meal from their tastings and give-aways. On this start-of-the-summer shopping day, they were appropriately pushing their frozen daiquiri and margarita mixes.

We scoffed at first, then tasted, then scoffed some more. We're not big fans of these mixes. But the idea of a frozen blender drink got us tempted. We picked up some peaches and limes in the produce section and stopped in to the liquor store next door for a bottle of spiced rum. Powdered sugar was in our cupboard at home and there was plenty of ice in the freezer.

Back in our kitchen, we unpacked our groceries and quickly got out the blender, dusty from lack of use, to try out our new craving. Some horrible grinding and sputtering noises later we headed back to Costco... small appliance department... blender section. Back home again with our new toy, we set to work. It took a few tries to get the fruit, alcohol and sugar ratios to our liking but it wasn't exactly hard work. The end result is, what we believe, one of the tastiest concoctions there are.

Hot summer weekends, relaxing on our porch, tossing a ball for our puppy to fetch, frozen drinks in hand. What a lovely summer we had!

Per 2 Servings:
1 Peach, pitted
Juice of 2 limes
4 oz. Spiced rum
3 Tablespoons powdered sugar

Blend with as much ice as the blender can hold and serve in a glass with a sugared rim. *

* After you've juice the limes, run one of the squeezed halves around the rim of each glass.  Fill a shallow bowl with a little sugar and roll each glass around in until the edge is covered in sugar.

  2. Might have to bust out our own blender for this one! Especially with the sudden heat wave we've just experienced - I mean, it's September, and still 94 F outside! =)
