Stuffed Delicata Squash Part 2 (Meat)

Stuffed Delicata Squash

This heartier version of the stuffed Delicata squash is quick and easy enough to make during the work week. Dress it up, as it were, by serving it over an herbed risotto (as we've shown here). Or make it simple with a generous side salad and some crusty bread.  The flavor combination of the beef and squash is an excellent blend.

2 Delicata squash (any shape)
1 lb. Lean ground sirloin
1 Onion, chopped
2 Cloves garlic, minced
1/2 Cup tomato sauce
Salt & pepper to taste

Cut the squash in half and place on a baking sheet, scoop out the seeds, sprinkle with salt and place in a pre-heated 350 degree oven for 45 minutes.

Sauté the beef in a pan until browned. Add the onion, garlic, tomato sauce and seasoning and continue cooking for a few minutes.

Fill the squash cavities with the beef mixture and return to the oven for about 15 minutes. Remove from the oven and serve hot. Makes four servings.
