Pear, Roquefort and Walnut Salad

Pear, Roquefort and Walnut Salad

This salad has a special place in our hearts since it was the starter to one of our favorite meals on a wonderful Christmas vacation several years ago. It remains our special occasion salad.

Mixed greens
1 Pear, cored, quartered and sliced thin
1/4 Red onion
2 oz. Roquefort cheese
1/4 Cups walnuts

2 Tablespoons olive oil
2 Tablespoons sherry vinegar
1/2 Teaspoon mustard
1 Clove garlic, minced
Salt & pepper to taste

Whisk together the dressing ingredients and pour over the greens, onion and sliced pears. Top with the cheese and walnuts. Makes approximately 2 servings.
