Strawberries and Cream Popsicles

Recipe for sweet and tangy vanilla ice cream popsicles swirled with fresh strawberries.

It's hot and I want ice cream. Sometimes in a dish, sometimes in a waffle cone and sometimes in the form of an easy to grab popsicle. I don't discriminate when it comes to ice cream.

These easy cones are fun, though, and great to make for a crowd. Serve them on a tray of ice to buy a little extra time before they melt and let everyone grab and go.

You can use a regular shaped paper cup, if you prefer, but I think the cones are so appealing. I just stand them up inside glasses while they freeze and then use a pair of scissors to cut away the paper before serving. They actually come out quite easily.

I used one part milk, one part cream and one part thick Greek yogurt for the base because I like the extra bit of tang. But you can sub out the yogurt with either another cup of milk or cream depending on how rich you want the ice cream. Enjoy!

Strawberries and Cream Popsicles

Ingredients

  • 1 Cup whole milk
  • 1 Cup heavy cream
  • 1 Cup plain full fat Greek yogurt
  • 1/2 Cup plus 3 tablespoons granulated sugar
  • 1 Teaspoon vanilla
  • ¼ Teaspoon salt
  • 1 lb. Strawberries, chopped
  • 1 Tablespoon granulated sugar

Instructions

  1. Whisk together the milk, cream, Greek yogurt, granulated sugar, vanilla and salt. Pour into an ice cream maker and churn for about 20 minutes or however long your machine's manufacturer recommends.
  2. Toss the diced strawberries with the remaining tablespoon of sugar and let sit while the ice cream churns. When the ice cream is ready, fold in the strawberries. Pour into cone shaped cups, insert a popsicle stick and freeze for at least 4 hours before serving.
