Crumb Topped Baked Apples

My mom used to bake apples sometimes, when I was a kid. The house would smell wonderful with that aroma of cooked apples and cinnamon. All the promise of pie but none of the satisfaction. Am I the only one who found baked apples a little disappointing?

I asked myself what was missing that made me not look forwarding to eating them and the answer was simple. The crust was missing and I love pie crust. But there's actually an easy way to get the same crust like satisfaction while still keeping this an easy dessert. If you've been reading my blog for a while, you probably already know I love a crumb topping and that's exactly what this recipe needed.

I also added some store bought jam to the middle of the cored apples so that a little bit of sweetness can spread through the inside. So you've got the soft cooked apples, slightly sweetened from the warmed jam, and a buttery, cinnamon crumble on top to give the texture and flavor of pie crust. This is not a disappointing baked apple at all. Enjoy!

Crumb Topped Baked Apples

Ingredients:

  • 4 Firm apples like HoneyCrisp or Granny Smith
  • 1/4 Cup jam, any flavor you like
  • 4 Tablespoons unsalted butter, melted
  • 1/4 Cup granulated sugar
  • 1/2 Teaspoon ground cinnamon
  • 1/4 Teaspoon salt
  • 3/4 Cup all-purpose flour
  • Caramel sauce for topping, optional

Instructions:

  1. Pre-heat the oven to 375 degrees.
  2. Wash the apples and use a corer to remove the seeds. You can leave the peel on the apples or remove it, as you choose. Using a sharp paring knife, enlarge the hole the corer made but be sure not to punch through the bottom of the apples.
  3. Spoon equal amounts of the jam into the center of each cored apple.
  4. Whisk the granulated sugar, ground cinnamon and salt into the melted butter and stir in the flour. Mix together until full combined.
  5. Place the apples on a baking sheet lined with parchment paper. Using your hands, clump the crumb mixture together and place over each apple. Bake for 35 to 40 minutes or until the crumb topping has browned and the apples are soft. Pour caramel sauce over top, if desired.
