Cheesy Meatball Sliders

Summer may not be officially over but summer schedules definitely are. It's back to school, back to work, back to real life. And that also means back to meal planning for quick and easy dinner ideas.

Meatballs are one of my favorite make ahead entrees. I cook up a large batch on Sundays and they keep beautifully for a few days in the fridge. All I have to do is make a salad and maybe a side of spaghetti. But easier still is to just serve them on slider rolls with plenty of melted cheese and some salad or coleslaw on the side. Dinner is done in a hurry but, more importantly, it's absolutely delicious. Remember to use a mixture of beef and pork to get the most tender meatballs ever. Enjoy!

Cheesy Meatball Sliders

Recipe for moist beef and pork meatball sandwiches with tomato sauce and melted mozzarella cheese.

ingredients:

3/4 lb. Ground beef
1/4 lb. Ground pork
1 Egg
1 Onion
4 Cloves garlic
1/2 Cup parsley
1/4 Cup breadcrumbs
1 Tablespoon water
1/2 Teaspoon dried oregano
1/2 Teaspoon salt
1/4 Teaspoon black pepper
4 Cups tomato sauce, homemade or store bought

instructions:

Pre-heat the oven to 400 degrees.

Add the ground beef, ground pork and egg to a large bowl.

Place the onion, garlic and parsley in a food processor and pulse until well chopped. Add to the bowl.

Stir in the water, oregano, salt, black pepper and breadcrumbs until well combined.

Using a 2 oz. scoop, form meatballs and place on a baking sheet lined with parchment paper. Bake in the oven for 20 minutes.

Heat the tomato sauce in a large pot, add the meatballs, cover and lower the heat. Simmer for an additional 20 minutes and serve.
