Loaded Turkey Sandwich with Sweet and Spicy Mango Honey Sauce

Is it back to school time where you are? Or do you just have a need for a good desk lunch, day in and day out because that's definitely the case for me. Either way, you've probably got sandwiches on repeat.

Turkey with mayo, turkey with mustard...on repeat. I needed something different. Since I generally like cracked pepper turkey, there's definitely room for something sweet. Something like Middle Eastern amba sauce (a sweet and spicy mango sauce), which I love and which is hard to find and takes 3 days to make. Um...no, there's just got to be a shortcut. So I spent some time in my kitchen this past weekend, armed with fresh mangoes (which are wonderfully in season), some spices and a jar of honey. And I succeeded in making a delicious version of amba that took 15 minutes instead of 3 days.

I love using natural sweeteners like honey in my cooking. It not only brings out the flavor of fruit but it enhances all the flavor notes like sweet, sour, salty, etc. And, of course, it balances out the heat of the jalapeno. I admit I tend to be a wimp about heat but feel free to add more jalapeno and make the sauce as spicy as you like. Slather this sauce on your sandwich, on falafel, on grilled chicken. You'll definitely have this one on repeat. Enjoy!

Ingredients:

For the Sweet and Spicy Mango Honey Sauce:
  • 2 Cups chopped mangoes
  • 1/4 Cup water
  • 1/4 cup honey
  • 2 Tablespoons lemon juice
  • 1/4 Teaspoon ground ginger
  • 1/4 Teaspoon garlic powder
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon black pepper
  • 1 Teaspoon finely diced jalapeno, or to taste
For the Sandwich:
  • 2 Slices whole grain bread
  • 1/4 lb. Cracked pepper turkey
  • Shredded carrots
  • Sliced cucumbers
  • Arugula or romaine lettuce (I used micro arugula)
  • Mango honey sauce

Instructions:

  1. To make the sauce, add the water, honey, lemon juice, ginger, garlic powder, salt and pepper to a pot and cook, on medium low heat, for a couple of minutes. Make sure you stir often.
  2. Add the mango and jalapeno and continue cooking for about 5 - 7 more minutes or until the sauce begins to thicken.
  3. Using a small food processor or stick blender, puree the sauce until it's mostly smooth. Pour into a jar and store in the refrigerator for about a week.
  4. Assemble your sandwich and slather on the mango honey sauce.
