Back in my youthful clubbing days (no, we're not going to talk about how long ago that was) I was a gin and tonic girl. I can't say I remember exactly loving it but it seemed to be popular with my friends and I rather liked the smell of juniper berries. And then, I didn't. One day I got tired of the juniper and the tonic and moved on to more involved cocktails.
I don't know if I'll ever go back to being a simple gin and tonic girl but I've been enjoying elevating the basic with new taste additions.
Flavored tonics are so trendy now and elderflower is showing up in lots of mixers. That's a very, very (very) good thing and a few definitely came home with me.
I already know that lychees and elderflower go great together and there are still some beautiful sweet ones left this season. So, between my renewed love of gin, my ever present love of lychees and my stash of elderflower tonic, this drink came together easily and deliciously. Cheers!
Lychee and Elderflower Gin and Tonic
Prep Time: 10 Minutes
Ingredients (1 Cocktail)
- 2 oz. Gin
- 2 Lychees
- 1/2 oz. Lime juice
- 1/2 oz. Simple syrup
- 4 oz. Elderflower tonic
You can puree the lychees in a blender or small food processor first. Or add them to a cocktail shaker and mash down well with a spoon.
Add the gin, lime juice and simple syrup to the cocktail shaker and fill with ice. Shake well and pour into a chilled cocktail glass. Top with the elderflower tonic.
