It's getting weird out there, isn't it? And yeah, I was half tempted to call these quarantine apple turnovers but they'd be good no matter what.

Like most of you, I took stock of what I had in the fridge, freezer and pantry because grocery shopping is a little bit like a game of Chopped these days. And while I've since gotten my hands on some bags of flour, I didn't actually have any in the house over the weekend and the stores were out. But I did find a package of puff pastry in the freezer. Score!

I'd picked up some apples from the corner fruit vendor and could certainly spare a couple to make this treat. The rest of the ingredients were staples like sugar, cinnamon and milk. It's such a simple recipe but it's so good. We're all stressed right now but hot apple turnovers help. Enjoy!

Ingredients:

  • 2 Sheets frozen puff pastry, thawed
  • 2 Apples, peeled, cored and diced
  • 1/4 Cup granulated sugar
  • 1/2 Teaspoon ground cinnamon
  • Pinch of salt
  • 1 Egg
  • 1 Tablespoon water

  • For the Glaze:
  • 1/2 Cup powdered sugar
  • 1 - 2 Tablespoons milk
  • Pinch of salt

Instructions:

How to cook Glazed Apple Turnovers

  1. Pre-heat the oven to 350 degrees.
  2. On a floured surface, roll out each sheet of puff pastry slightly and cut into 9 equal squares.
  3. Toss the peeled, cored and diced apples in a bowl with the granulated sugar, ground cinnamon and salt.
  4. Place a tablespoon or two of the apple filling on top of half the puff pastry squares. Keep the filling slightly away from the edges. Top with the remaining half of the squares and crimp the edges shut with the tines of a fork.
  5. Whisk the egg and water together and brush the tops of the turnovers. Place on a baking sheet lined with parchment paper and bake for 40 - 45 minutes or until lightly golden brown.
  6. Whisk together the powdered sugar, milk and salt until smooth and drizzle over the baked turnovers. Serve warm.
