Warm Apple Fritters

Yay! It finally cooled down enough for me to turn off my air conditioner. I mean, seriously, this was the hottest summer ever in New York and I was over it a long time ago. Bring on autumn with its apples and pumpkins and open window breezes.

Autumn also brings up memories of many drives upstate to go apple picking and makes me nostalgic for the aromas coming out of the orchard farm stores. Fresh fried apple cider doughnuts, pie and fritters are on offer and they're nearly impossible to resist. And why even try to resist these sweet fried dough puffs, stuffed with fresh apples and dusted with powdered sugar? And while I do prefer to eat them while sitting at a picnic table, overlooking the beautiful mountains in the distance of our favorite orchard, I'll settle for bringing a bit of that taste home with me when the mood strikes.

Fritters are remarkably easy to make and you don't even have to drag out the mixer. Just a big bowl, a whisk and a few simple ingredients come together to make this beautiful autumn treat. Enjoy!

Warm Apple Fritters

Recipe for sweet apple fritters, fried and served hot with powdered sugar.

ingredients:

1 Egg
1/3 Cup whole milk
1 Tablespoon unsalted butter, melted
1 Teaspoon vanilla
2 Tablespoons granulated sugar
1 Teaspoon baking powder
1/2 Teaspoon cinnamon
1/2 Teaspoon salt
1 Cup all-purpose flour
2 Apples
Powdered sugar for dusting
Canola oil for frying

instructions:

In a large bowl, whisk together the egg, milk, butter, vanilla, sugar baking powder, cinnamon, salt and flour.

Peel, core and dice the apples. Stir into the batter.

Fill a large pot or deep cast iron pan with 2 - 3 inches of oil and bring to 350 degrees.

Working in two batches, drop about a heaping tablespoon of batter into the hot oil and fry, turning the fritters, for about 4 to 5 minutes or until lightly golden brown.

Remove with a slotted spoon onto a paper towel lined plate and dust with powdered sugar. Serve warm.
