Chorizo and Cheddar Snack Stacks

I think I've told you all that I have trouble resisting holiday flavors. And so, no sooner did I get through obsessing over the Food Should Taste Good Harvest Pumpkin Tortilla Chips, when I tasted their Sweet Potato. My first thought was YUM and the second was that the shape was so cute and perfectly oval, like slices of sweet potato. They were just asking to be sandwiched together with a tasting filling in the middle.

Between holiday gatherings, regular company gatherings and televised sporting events, I'm always on the lookout for interesting appetizers and snacks.

Yes, I can and do put these out with some hummus and dip but the sandwich idea really spoke to me.

I used good chorizo sausage and plenty of cheese and came up with a fun play on traditional nachos. It's also possible I've made these... cough... cough... without company coming over. Enjoy!

Chorizo and Cheddar Snack Stacks

Prep Time: 15 Minutes
Cook Time: 15 Minutes
Ingredients (4 Servings)
  • 1 lb. Chorizo sausage
  • 8 oz. Shredded Cheddar Cheese
  • 2 Tablespoons chopped cilantro (you can also use parsley)
  • 1 5.5 oz. bag Food Should Taste Good Sweet Potato Tortilla Chips
Chorizo and Cheddar Snack Stacks
Remove the chorizo from it's casing and brown in a skillet or cast iron pan until cooked through. Use a spatula or wooden spoon to break it up into crumbles.

Spread out half the chips in a layer on a tray or plate and sprinkle on the cheese and cilantro.

Melt the cheese either in a broiler or in the microwave and top each chip with the remaining half of the chips. Serve warm.
