Simple Apple Cake
Sometimes you need simple, easy to make cake. Not box mix easy, fresh made easy. With a moist, just-sweet-enough batter, perfumed with vanilla, and a thin layer of cinnamon apples and powdered sugar on top. Really, really good simple cake.
On this sunny Friday I was headed off to visit my mom who is a big fan of simple cake. She's also the one who taught me to love apple cake so I knew I wanted to bring her this. It comes together quickly so I made it this morning while I was getting ready to leave and we had a fresh baked treat for our lunch. Enjoy!
Ingredients
2 Eggs
1/2 Cup sugar
1 Stick unsalted butter, at room temperature
2 Tablespoons milk
1 Tablespoon vanilla
1 Cup all purpose flour
1 Teaspoon baking powder
1/2 Teaspoon salt
1 Golden Delicious or other soft eating apple
1 Tablespoon sugar, for topping
Dash of cinnamon, for topping
Add the eggs and sugar to a large bowl and beat together using a stand or hand mixer. Beat in the butter, then the milk and vanilla.
In a separate bowl, sift together the flour, baking powder and salt. Add the dry ingredients into the wet and mix just until combined. Pour the batter into a buttered and floured 8" or 9" spring-form pan.
Peel, core and slice the apples thinly. Lay them in a diagonal pattern on top of the batter. Mix together the tablespoon of sugar and cinnamon and sprinkle over the apples. Bake in a pre-heated 350 degree oven for 35 - 40 minutes or until a cake tester comes out clean. Cool before removing from the pan and dust with powdered sugar before serving.
Holli saw the pictures over my shoulder and asked if I would make this tonight. Uh, yes! She does not like icing or frosting of any kind so when she saw this - she was thrilled!
ReplyDeleteThe best thing about simple cakes like this is how simple it is for me to convince myself it is also completely apropos for breakfast the next morning. It really is a truly stunning cake.
