Mediterranean Tapas Potatoes

Every year it seems like I spend the month of December coming up with creative ways to feed guests. Oh, planning a dinner is easy enough but what about those in-between, buffet type foods. A cold cut platter, cheeses, crudites, something more special?. But what?

Over the years I've found myself at many Christmas parties and I absolutely love New York at night during the holiday season. Carols playing, what seems like a million festive lights, great cocktails and delicious, interesting appetizers.  And it always seems to be the simple dishes that have such complex flavors. I really wanted to recreate those experiences for my guests but how to develop all those flavors?

I picked up a few of the Mezzetta Everything Spreads thinking they would be a good base for me to tinker with.  But no tinkering was needed. I used the Sundried Tomato and Basil for a Mediterranean flavor and decided to see if it would be even better with a touch of the Savory Garlic spread added in.  Oh, yeah. I started with a pound of baby potatoes but I'll warn you right now that those go fast. Hell, I could have easily eaten half of them just while preparing the dish.

Mediterranean Tapas Potatoes

Prep Time: 15 Minutes
Cook Time: 15 Minutes
Ingredients (Makes 4 Servings)

Instructions
Mediterranean Tapas Potatoes
Add the potatoes to a pot of boiling salted water and cook for approximately 15 minutes or until they can be pierced with the tip of a knife. While they're cooking, make the dressing by whisking together the mayonnaise, milk, Sun Dried Tomato and Basil spread and Savory Garlic spread. When the potatoes are cooked, drain well and add them to the dressing while they're still warm so that they absorb the flavors. Toss in the basil before serving either warm or at room temperature.
