Cheddar Apple Pie Grilled Cheese

Since April is National Grilled Cheese Month, I figured it was time I shared one of my favorite grilled cheese recipes with you.  Of course, it's more of an idea than an actual recipe since I'm assuming everyone knows how to put cheese on bread and toast it up.  It's the "extras" though, that make each version unique.  Tomatoes and avocados are popular additions and I certainly have no objection to a couple of slices of bacon.  But, since I'm usually trying to keep it on the leaner side, I tend to stick to this version more than any other.

If you've never combined apples and sharp cheddar cheese than you're missing out on a taste treat.  I still remember, many years ago, spending the day shopping with my mother and stopping at a cafe for an afternoon cup of tea.  We ordered slices of apple pie and the waitress asked if I wanted mine with a hunk of cheddar.  I was completely intrigued by the idea and ended up loving it.  And, not long after, this sandwich combination was born.  I use sweet eating apples like Golden Delicious and slice them very thinly.  A slow grill (or roast) in the oven brings out the apple's sweetness even more and gives them the consistency of apple pie filling.  And since the sandwich only uses half the apple, I can eat the other half while I'm waiting.  Delicious and filling.  Enjoy!

Ingredients
2 Slices sourdough bread (or whatever kind you like)
4 Slices sharp cheddar cheese
1/2 Golden Delicious apple (or other sweet variety)
Butter flavored baking spray

Cheddar Apple Pie Grilled Cheese
Peel the apple and slice very thinly.  Layer 2 slices of the cheese on top of one slice of bread.  Layer the apple slices over the cheese and top with the remaining 2 slices of cheese and the second slice of bread.  Spray the top of the bread with the baking spray.  Place on a baking sheet lined with parchment paper and roast in a pre-heated 350 degree oven for 15 minutes.  Flip the sandwich, spray the top of the second bread slice with the baking spray and continue cooking for an additional 10 - 15 minutes or until the bread is a light golden brown.

  6. No stinkin' way! I love apple pie and cheddar but never made the connection......I have an apple every morning for breakfast and Pink Ladies (my fave) just began showing up in stores again. I can't wait to try it!
