Strawberry Sauce

Strawberry Sauce

I love fresh, seasonal strawberries as much as anyone. But what if a man comes home from Costco with the big 'ole, honking, giant, feed an army, monster tub of strawberries? I gave it my best effort but after 3 days of stuffing myself with strawberries to the point where my skin was about to change color (while said man was off on a business trip), I knew I would lose this battle. So, what to do? Make strawberry sauce, of course!

Fat free Greek yogurt with strawberry sauce
What do you do with strawberry sauce, you ask? You mix it in with your fat free Greek yogurt instead of honey... yummy. You pour it over a slice of angel food cake...very yummy. You pour it on top of some vanilla ice cream...extra yummy! And, finally, you use it to make a strawberry martini... yummy with a kick!

Ingredients
Fresh strawberries, rinsed and with the green stems and leaves removed
Water


Strawberry Sauce
Puree the strawberries and water in a blender or food processor. I've found that you'll need to add approximately 1/4 cup of water for every 4 strawberries to get a fine enough liquid to strain. Pass the liquid through a fine mesh strainer to remove the pulp and seeds. You can, of course, add a bit of powdered sugar or simple syrup if your berries are not sweet but with seasonal berries I usually find it's not needed. Store the strawberry sauce in a sealed bottle or container in the refrigerator and it should keep for at least a week.

  3. I have been knee deep in strawberries for over a week and just as I finally finished the last of them my mother showed up for a visit with a huge Costco flat of strawberries lol! I feel your pain I have made so many things with strawberries it's out of control. I will have to make some of this as I still have berries in the fridge! Perfect timing for this post. :)

  12. We buy those big honkin things of strawberries every week because my daughter is a berry monster. Maybe next time I should buy two and then make this. It looks AMAZING!! I love stuff like this.

  20. The Hubs brought home two flats of local strawberries last week. We made lots of freezer jam but I would have loved to have had this idea. I know I would love it with the Greek yogurt.
